Recipe - Spaghetti and Meat Sauce

Yield: 100 Portions
Portion size: 1/2 cup sauce over 3/4 cup cooked spaghetti

Ingredients

  • Marinara Sauce - 4 #10 cans
  • Beef crumbles - 13 lbs 12 oz

Directions

Prior to Day of Service

  1. Use 4" steam table pans. In each pan, place 1 can of sauce and 3 lb 7 oz beef crumbles. (2.19 oz will meet a 2oz meat requirement)
  2. Cover and heat in 350° F oven for approx 45 minutes (Critical Control Point - Heat until internal temperature reaches 165° F )
  3. Hold in warmer until ready to use. (Critical Control Point - Hold for service at 135° F or higher)

Per Serving: 335 cal., 25.9 g pro., 23.1 g carb., 5.9 g fiber, 16.9 g fat, 5.0 g sat. fat, 40 mg chol., 1,639 mg sod., 1,440 IU vit. A, 23 mg vit. C, 117 mg ca., 5.0 mg iron
