Red Potatoes with Herbs - E102

  • Baby red potatoes, unpeeled 24#
  • Basil, dry 3/4c.
  • Chives, dry 3/4c.
  • Lemon juice 3/4c.
  • Black pepper 1 Tbsp
  • Vegetable oil 1 1/3c.
  1. Steam until form tender, about 20 minutes.
  2. Combine basil, chives, lemon juice, pepper, and oil and simmer.
  3. Pour herb/oil mixture over drained potatoes. Toss to coat. Hold at 130F or above.

100 servings. Serving size 5-6 potatoes(4oz) = 1/2c vegetable

Per serving: 110 cal., 2g pro., 22 g carb.,1.8 g fat, 0.32g sat. fat, 0 mg chol., 4.5 mg sod., 112 IU vit. A, 15 mg vit. C, 16mg ca., 0.55 mg iron
